This snack deserved it’s own plate. I have been having bell peppers on heavy rotation lately and just love them. They have almost – almost – dethroned Persian cucumbers as my favorite.
My new obsession:
1. Cut up a bell pepper. These are some local grown ones.
2. Fill with cottage cheese. Cowgirl is INCREDIBLE.
3.Top with Trader Joe’s everything but the bagel seasoning.
4. Kick it up a notch with everything but elote seasoning on top or even chile lime seasoning. Both amazing.
Devour it up. The cottage cheese really does keep you full for hours.
